Use a rolling pin to smooth out all sides of the pastry sheet. Wipe off excess flour and pour the chilled apple sauté in the middle of the pastry sheet. Follow with the flour, cocoa, baking soda, baking powder and the salt. Mix it all together into a finely combined powder, by twisting it with your whisk and set it aside. Step 5: Combine the wet ingredientsPut the eggs into the mixer. Whisk them on high speed until fluffy. Slowly pour in the oil, little by little. Make sure that it has fully incorporated before adding in the next batch. Add the buttermilk, vanilla and the melted chocolate and coffee liquid. Add it in slowly as it will splash back! Step 6: Add the dry ingredientsSlow down the mixer and carefully spoon in the dry mixture. Allow it to mix until it's just combined and remove the bowl from the mixer. Step 1: Preheat ovenHeat oven to 190C/fan 170C/gas 5. Line two 12-hole bun tins with paper cake cases. Step 2: Cake mixtureCream 175g butter and 175g caster sugar together until light and fluffy. Add 1 teaspoon vanilla essence and gradually beat in 3 beaten eggs little by little, if the mixture curdles add a table spoon of flour and continue beating. Sift in 175g self-raising flour and 1/2 teaspoon baking powder and gently fold in. The mixture should easily drop off the spoon. If it doesn't, add a little milk and keep stirring. Step 3: BakeDivide the mixture between the cake cases filling each on about ¾ full, and bake for 12-15 mins, until they are pale golden and springy to the touch.
